Producer Info:
From producer Silvio Sanchez, this coffee is the unique result from a mother-son business partnership. The farm is located in a secluded place in La Union, in the San Fernando region of the Nueva Segovia department. This remote farm is accessible only by a difficult-to-navigate access road and beyond the reach of cell service, but once there, visitors are immediately awed by the beauty of this land.
Sanchez and his mother, who own the farm, grow their coffee in the deep shade of an immense pine forest, giving their farm a quiet, moody atmosphere, like a natural cathedral.
Processing: Natural
What is the Natural Process?
The Natural process is a sun-dried process that involves the drying of cherries whole without the additional use of any other materials, including water for washing or machines for depulping. (Hence the term "natural!) Before the coffee is dried, it is harvested from the trees, floated in water, then sorted to remove any fruits that are not up to standard. From there, the sun-drying begins.
