Alfonso Solis Porras and his family own the La Toboba Mill and the farm El Cedral, as well as other farms in the area. With 70 years of experience, they utilize the high elevation and surrounding climate to produce high quality coffee, and do so with as little waste as possible.
What is the Red Honey Process?
Honey processed coffees begin with ripe cherries picked and depulped. The sticky fruit flesh underneath the skin, called "mucilage," is left on the bean while it dries, and this contributes to the fruity flavor of the resulting cup. The term "Red Honey" is a general reference to how much of this sticky mucilage is left on the beans during drying, with white and yellow honey processed coffees having less mucilage and black honeys having more. After the coffee is dried in piles or raked out in even layers, the parchment layer is removed and the coffee is ready for export.
