About the Producer
Edinson Argote partners with Luz Angela Rojas in a family-run project dedicated to non-traditional coffee varietals and innovative practices. Their agronomic management focuses on soil care through strategic shading, the use of organic matter, and pH maintenance with amendments and lime, enhancing coffee quality from cultivation. They are equally passionate about the quality of cultivation and the processing of the coffee as they are about investing in their family and community.
Process
Yeast Inoculated Natural Process
The coffee cherries are picked and floated to ensure optimal ripeness, sugar content and flavor potential. Then the cherries undergo double fermentation. The initial fermentation is an anaerobic fermentation in oxygen free tanks. The coffee then dries until it reaches 20% moisture content. For its second fermentation, the coffee cherries are rehydrated using specific yeast, further enhancing its complexity and depth. After drying for a second time to optimal moisture content, the coffee is rested and stored in grainpro bags.
