If La Divisa had a voice, it would sing “what a wonderful world” on a summer day. Its notes of perfectly ripe strawberries complement the exquisite experience of cherry blossom. This coffee is fruit-forward with low acidity, and a noticeably juicy body. A long aftertaste of sweet bubblegum will leave a smile on your face and an extra pep in your step.

About the Producer
Diofanor Ruiz, born into a traditional coffee farming family, has been engaged in farming from a young age. Certified as a coffee farmer in 2003, he bought his own 14-hectare farm, La Divisa, located at 1950 meters above sea level in Buenavista, Quindio, in 2005. Alongside his wife and agroforestry-engineering student son, he also grows a variety of fruit and native trees to enhance soil quality, provide shade, and boost the farm's resilience.

Initially unaware of the taste of their own product, Diofanor was inspired in 2005 to shift from traditional to quality-focused farming practices after tasting his coffee, significantly benefiting his livelihood. In 2017, he began collaborating with Cofinet, adopting new processing protocols that further improved his coffee quality.

Process
Anaerobic Natural

What is the Anaerobic Natural Process?
To produce the wild, fruit-forward flavors we love, this processing method begins with coffee in its whole cherry placed in special containers without oxygen. The coffee undergoes its fermentation in this anaerobic environment for anywhere from 48 to 200 hours usually, until it eventually is removed and spread onto raised beds for drying.
