In this lot from La Esmeralda in Honduras, you’ll taste every kind of fruit you can think of, but specifically tart black cherry, sweet red grape, and delicate orange. The anaerobic natural processing method turns up the sweetness and complexity, making you think you just ate a whole bag of fruit snacks. You are going to love it.

Producer Information
This coffee comes from a special farm that was purchased in 2021 because of its high altitude, volcanic soil, and rich cultural history. Its purpose is to allow the farm-holders to have more control over their coffee quality as well as experimental crops. They have so far worked with specialty varietals like geisha, red bourbon, and parainema.

What is the Natural Process?
The Natural process is a sun-dried process that involves the drying of cherries whole without the additional use of any other materials, including water for washing or machines for depulping. (Hence the term "natural!) Before the coffee is dried, it is harvested from the trees, floated in water, then sorted to remove any fruits that are not up to standard. From there, the sun-drying begins.
