About the Producer
Felipe Trujillo is a Colombia importer who is as proud of producing coffee as he is to help it cross borders. Felipe Trujillo comes from generations of producers of commodity-grade coffee in Antioquia. Desiring something different, he began his professional life as an engineer. However, years later, he decided to return to growing coffee, but still wanted to do something different and more exciting than the high-volume, low-quality coffee he was used to. He began to experiment with wild processing methods and higher quality varieties, eventually being considered a master of experimental processing methods such as a beer yeast inoculation, this unique anaerobic washed profile, and much more.

Process
Honey

What is the Honey Process Specific to this Coffee?
After picking, the coffee cherries are floated, cleaned and sorted by hand for a ratio that includes 70% ripe, 20% over-ripe, and 10% half-ripe cherries. The coffee cherries are then placed in a plastic tank to start an aerobic and acetic fermentation process to imbue a fruity smell and taste of the coffee. After 48 hours of fermentation, the cherries are depulped and are kept in sanitary 2B finished stainless steel fermenters with a gas valve to control the anaerobic process during 72 hours. The coffee is spread onto sunbeds to dry for 2 weeks until the grain is under 11% of moisture. The coffee is kept in Grain Pro bags with the parchment for at least 2 weeks before it is milled and exported.
